In exactly 40 days time I will be 40 years old! The very thought of it both terrifies and excites me. I was blessed in so many ways during my 30s and I anticipate my next decade with an open if somewhat flaky mind.
This blog is my first step into embracing my 40s. Food - the planning, preparation, presentation and tasting of it are a big part of my world. I LOVE to cook, but I have very mixed success with it. My family frequently stare in disbelief at what I serve up and I have been known to mistake butter for cheese and attempt to cook a cake in a slow-cooker (it didn't work).
Through this blog I want to share with you my attempts at cooking and feeding my family. Recent news reports on the nonsense that is in processed food has made me determined to avoid ready meals and wherever possible make it at home. Ideally I want to stick to British ingredients and do my bit to manage our family's carbon footprint.
I am really looking forward to getting to meet all you food blog readers out there. I read and adore tons of your blogs and can't wait to share a little bit of cyberspace with you all.
So, on with my first ever recipe posting.....
We have run out of biscuits and it is half term - this is bad news. As part of my non-processed food plans, popping out to buy a pack was not going to happen, so I scrolled through my pinterest board and landed on the following recipe from ldsliving.
Lemon Crinkle Cookies
1/2 cup or 125g butter, softened
1 cup or 170g granulated sugar
1/2 tsp vanilla extract
1 egg
Zest and juice of 1 lemon
pinch salt
1/4 tsp baking powder
1/4 tsp bicarbonate of soda (baking soda)
1 1/2 cup or 180g self-raising flour
Caster sugar for dusting.
Directions
Preheat the oven to 350 degs (US) / 180 degs (UK). Grease a baking sheet.
In a large bowl, cream the butter and sugar together until light and fluffy. Whip in the vanilla, egg and lemon.
Stir in all the dry ingredients (except the caster sugar) until just combined. Pour the caster sugar into a bowl. Take a tsp worth of dough, roll into a ball in your hands and then roll in the caster sugar (or you can get your 10-year old to do this). Place on the baking sheet.
Bake for 7-10 minutes (mine were done in 7 mins), but I have a very burny oven.
